“Going to Disney again, why”?

How many times have I heard “Going to Disney again, why”? It never ceases to amaze me the people who do not understand the love of Disney. If you have to ask, then you just would not understand. I thought about it last night and I remember so vividly that Mickey Mouse was a huge part of my childhood. I remember watching “The Wonderful World of Disney” how Tinkerbell would open the credits. I loved seeing that! I remember watching “The Mickey Mouse Clubhouse”, granted I don’t remember specifics – but I do remember watching. I remember being little and having such a hard time spelling the word house. Guess how I remembered? You got it M-I-c-k-e-y M-o-u-s-e!! I would sit in class during my spelling test and when she would call out “house” I would sing the song in my head and replace the m with an h!! There you have it – not only was Mickey Mouse entertaining, but educational!

There is nothing like the Disney Magic that encircles us as we begin planning a trip. The anticipation of knowing what we are doing and where we will have reservations for is so exciting. Justin and Meaghan have their favorites and I always make sure to include them with some of the planning. I have a favorite quote from a fellow Disney fanatic that I feel embellishes the way that Kevin and I feel about Disney.

Ready for Spring...

Slow Cooker Cheesy Potato Soup - YUMMO

INGREDIENTS

1 bag (32oz) frozen southern-style diced hash brown potatoes, thawed
1/2 cup frozen chopped onion from 12oz bag), thawed
1 medium stalk celery, diced (1/2 cup)
1 carton (32oz) chicken broth
1 cup water
3 tablespoons all-purpose flour
1 cup milk
1 bag (8oz) shredded American Cheddar cheese (2 cups)
1/4 cup real bacon pieces (from 2.8oz package)
4 medium green onions, sliced(1/4 cup)

DIRECTIONS

1) In 3 or 4 quart slow cooker, mix potatoes, onion, celery, broth and water.

2) Cover; cook on Low heat setting 6 to 8 hours.

3) In small bowl, mix flour into milk; stir into potato mixture.

Increase heat setting to High. Cover; cook 20 to 30 minutes or until mixture thickens. Stir in cheese until melted. Garnish individual servings with bacon and green onions. Sprinkle with pepper if desired.

Instead of using purchased bacon pieces, cook 2 strips of bacon until crisp, then drain and crumble. Southern-style hash brown potatoes are diced instead of shredded. These work best in this recipe.

Justin

Tomorrow is Justin's 19th birthday! Seems like just yesterday he was running around the house yelling for toctick milk and tatadacks (chocolate milk and cracker jacks). My sweet little baby is no longer a baby! Justin was such a good kid. He never gave us any problems during his early teenage years and continues to use good common sense. He has brought such joy to our lives and I am very proud to be his Mother. Learning valuable life lessons will keep a level head on his shoulders and has taught him the true value of family. Happy birthday Justin, Mom loves you!!
